CHOCOLATE SILK PIE

CHOCOLATE SILK PIE
9" pie crust, unbaked (recipe follows)
6 ounces MiniCarb chocolate chips, 1 cup
1/2 cup butter
Pinch salt
1 cup granular Splenda or equivalent liquid Splenda
1 tablespoon cocoa, sifted
3 eggs
2/3 cup heavy cream
1 teaspoon vanilla
Whipped cream, optional (not included in carb count)

Pie Crust:
1 1/4 cups Carbquik
5 tablespoons butter, softened
2 1/2 tablespoons boiling water

Pie Crust: Mix the Carbquik and butter together in a medium bowl. Add the boiling water; stir vigorously until a very soft dough forms. Press the dough firmly in a 9-inch pie plate, bringing the dough onto the rim of plate, dusting your fingers with Carbquik if the dough is too sticky. Flute the edge if desired. Freeze for 15 minutes, while making the filling.

Filling: In a large microwave-safe bowl, melt the chocolate chips and butter on 50% power for 2 minutes or until the butter and chips are melted; stir until smooth. Whisk in the salt, sweetener, cocoa, eggs, cream and vanilla. Whisk until well blended. Pour the chocolate mixture into the frozen crust.

Bake the pie at 350?degrees for 20-30 minutes or until the filling has puffed but the center still wiggles, covering edges of crust if it looks like it's getting too dark. Mine only took 20 minutes to bake. Cool completely. Chill until ready to serve. Serve with whipped cream if desired.

Makes 8 servings
Can be frozen

With granular Splenda:
Per Serving: 441 Calories; 39g Fat; 9g Protein; 25g Carbohydrate; 16g Dietary Fiber; 9g Net Carbs

With liquid Splenda:
Per Serving: 429 Calories; 39g Fat; 9g Protein; 22g Carbohydrate; 16g Dietary Fiber; 6g Net Carbs

This was adapted from a Pet Milk ad recipe. Although the filling of this pie is very nice, and is kind of like a fudgy flour-less cake, I don't care for the Carbquik crust. It has that Carbquik taste to it. I think I would make this again, but without the crust. The counts for a crustless version (baking time will probably be a little less) would be:

Filling only with granular Splenda:
Per Serving: 326 Calories; 28g Fat; 6g Protein; 16g Carbohydrate; 9g Dietary Fiber; 7g Net Carbs

Filling only with liquid Splenda:
Per Serving: 314 Calories; 28g Fat; 6g Protein; 13g Carbohydrate; 9g Dietary Fiber; 4g Net Carbs

I will probably come up with a separate recipe for the crustless version once I have a chance to try it. The pie plate would need to be well greased and I'm not sure how long the baking time would be yet.

NOTE: MiniCarb chocolate chips have been discontinued.
