Low Calorie Oatmeal Cookies

For low calorie oatmeal cookies that does not compromise on delicious taste, you can substitute applesauce in place of butter.

Basic Low Calorie Oatmeal Cookies

Ingredients
  • ½ cup ripe banana, mashed
  • 1 cup oatmeal
  • ½ cup raisins
  • ¾ cup self-rising flour
  • ½ cup low-fat mayonnaise
  • ½ cup brown sugar
  • 1 teaspoon rum
  • ½ teaspoon ginger powder
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ cup walnuts, chopped
  • ½ cup dried, sweetened, desiccated coconut
Method

In a medium-sized bowl, mix the brown sugar, mashed banana, low-fat mayonnaise and rum with the help of a wooden spatula. Now with the help of an electric mixture, beat in the flour, oats, sweetened desiccated coconut, baking powder, cinnamon powder and dried ginger powder. Add this flour mixture into the sugar and mashed banana mixture and combine them together until everything is thoroughly blended. Stir in the chopped walnuts and raisins. Take a big tablespoon of this low-fat oatmeal cookie mixture and place them on a baking tray lined with baking paper. Bake it at 180 º C for 15 to 20 minutes until they are browned.

Low Calorie Oatmeal Raisin Cookies

Ingredients
  • 1 cup dark brown sugar
  • 1 ½ cups whole-wheat flour
  • 1 ½ cup oats
  • 1 cup raisins
  • 1 teaspoon baking powder
  • 1 cup unsweetened applesauce
  • 1 tablespoon vanilla extract
  • ½ cup of corn syrup
Method

In a medium-sized mixing bowl, mix the corn syrup, applesauce and dark brown sugar until the sugar is dissolved. Add the whole-wheat flour, baking powder and cinnamon powder into this mixture. Next add in the vanilla extract and stir in the oats and raisins. Lightly grease a baking tray and place a tablespoon each of the oatmeal dough into it, approximately 2 inches apart. Bake them in a moderately hot oven for 15 to 20 minutes.

Low Calorie Pumpkin Oatmeal Cookies

Ingredients
  • 2 egg whites
  • 1 ½ cups self-rising flour
  • ½ teaspoon nutmeg powder
  • 2 cups oats
  • 1 cup demerara sugar
  • 1 cup pumpkin, pureed
  • 1 teaspoon cinnamon powder
  • 1 teaspoon baking powder
Method

In a large bowl, mix the demerara sugar with self-rising flour, nutmeg powder, cinnamon powder, oats, and baking powder. In another bowl combine the egg whites and pumpkin puree. Pour the flour and sugar mixture into the egg whites and mix until everything is fully combined and you get a good consistency. Line a baking tray with a greased baking sheet and drop the low calorie oatmeal cookie dough into it. Bake in a moderately hot oven for 15 minutes and cool in a wire rack before serving.

Low Calorie Cranberry Oatmeal Cookies

Ingredients
  • 1 cup oats
  • 2 egg whites
  • 3/4 cup all-purpose flour
  • ½ cup dried cranberries
  • 1 tsp vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 2 cups brown sugar
  • 6 tablespoons low-fat butter, softened
  • 1 tablespoon finely grated orange peel
Method

In a medium-sized bowl, beat the egg whites and low-fat butter until it is light and fluffy. Add the brown sugar and whisk it until all the sugar has melted. Now add vanilla extract and orange peel. In another bowl combine the flour, oats, baking powder and cinnamon powder. Whisk in the dry ingredients with the egg and butter mixture and mix everything well. Add the cranberries and gently fold it in. Drop these cookie mixture 1 tablespoon at a time into a greased baking tray. Bake them in a moderately hot oven for 15 to 20 minutes.
