SALSA VERDE TURKEY BURGERS

SALSA VERDE TURKEY BURGERS
Sauce:
1 avocado
1/2 cup sour cream
1/4 cup fresh cilantro, chopped
1 clove garlic, minced
Salt

Burgers:
1 1/4 pounds ground turkey, 85% lean
1/2 teaspoon salt
1/4 cup fresh cilantro, chopped
1/2 cup green salsa
4 slices pepper-jack cheese, about 4 ounces
2 small green or red tomatoes, sliced, about 4 ounces

In a small bowl, blend the avocado, sour cream, cilantro and garlic with a fork until well blended but chunky. Season with salt to taste. Keep chilled until ready to serve.

In a medium bowl, mix the turkey, salt, cilantro and salsa; shape in 4 patties. Spray a large nonstick skillet and heat over medium-high heat. Cook the patties 5 minutes. Flip them, top each with a slice of cheese and cook another 5 minutes on the other side.

To serve, top each burger patty with some sliced tomato then some of the avocado sauce.

Makes 4 servings

This is from Rachael Ray's "Every Day with Rachael Ray" magazine. The recipe was submitted by Erin Renouf Mylroie. Her version was served on Kaiser rolls. I don't like guacamole made with mayonnaise so I used sour cream instead. This increases the carb count a little but lowers the calories and fat some. Normally it's hard to find nice red tomatoes in the store but this time there wasn't a green one to be found. So, I had to use a red tomato. Rather than use cilantro as a sort of "lettuce" as in the original recipe, I put some in the avocado sauce and some in the burger patties. I thought that would work better when not using buns.

I was a little disappointed in these burgers. They're good but the burgers seemed a little mushy with all that salsa in them. My husband had his on a bun and he said he liked them a lot. He said he prefers soft turkey burgers over beef burgers which have a tendency to be tough and dry. I do like the flavor combinations going on in this recipe but it's maybe a little too much fuss for what you end up with. Click the photo to see a close-up.
