TEXICAN-LIME CHICKEN SKILLET
1/2 medium fresh cauliflower, shredded, 16 ounces
1 pound ground chicken or turkey
1 medium onion, chopped, 4 ounces
1 clove garlic, minced
2 tablespoons lime juice, juice of 1 lime
1 1/2 teaspoons cumin
1 teaspoon Tabasco
10 ounce can Ro-tel tomatoes with green chiles, drained *
1/2 cup canned black soy beans, drained *
1 teaspoon salt
Pepper, to taste
1/2 cup fresh cilantro, chopped
1 avocado, diced
Additional toppings, optional (see my comments below)

Put the shredded cauliflower in a microwaveable casserole. Add 2 tablespoons water; cover and microwave on HIGH 7 minutes, stirring after about 3 minutes. Remove from microwave and let stand covered 5 minutes; set aside.

Meanwhile in a 12-inch skillet, brown the chicken, onions and garlic until the chicken is done and the onions are tender. Stir in the lime juice, cumin and Tabasco. Add the tomatoes and black soy beans. Stir in the cauliflower and season with salt and pepper. Simmer a few minutes to heat through then stir in the cilantro. Top each serving with some of the diced avocado and serve at once.

Makes 5 servings
Do not freeze

* 1 can of drained Ro-tel will yield 1 cup diced tomatoes. You could substitute a cup of salsa, but there would be a few additional carbs. A 15-ounce can of Eden black soy beans yields 1 1/2 cups beans.

This is an adaption of a recipe from Dana Carpender's Lowcarbezine. Her recipe was called Tequila-Lime Chicken Skillet. Since I didn't have any tequila, I changed the name. By itself, this dish is pretty boring and somewhat dry. What makes it are the toppings you put on it and all the textures that are going on with the "rice" and beans. I served it with some Mexican Hot Sauce and Cilantro Pepita Sauce but you could also top it with shredded cheese and sour cream, etc. Only the avocado is included in the counts, so you'll have to add the carbs for any additional toppings. Although the carbs are pretty high, this is complete meal in one pan and you could add more meat to make it go farther. My husband loved it. I thought it could use a little more meat, but he thought it was just right. Click the photo above for a close-up.
