Raw organs

I know raw organs are the best to go. But how can I mntain a high fat diet if Liver, kidney, lung, and heart are all reletivly low in fat. I know Brain, Marrow,eye are great souces of fat. But should I cover my organs in suet or with some fat from elsewhere on the animal.

Answer
The organ-meats that are really high in fat are suet(100% fat), marrow(84.9% fat last I checked) and tongue(something like 50-60% fat). Brain and eyeballs also have a very high proportion of fat. Of course, you can also try hide-fat/muscle-meat fat as well. My own view is that marrow is the most superior type of fat, in terms of its additional nutrients.

(Re covering meats with suet-remark:- I don't think one generally  needs such large amounts of fat. I find I can get by with eating large amounts of lean meats at one meal followed by a mere 80g or less of marrow, at times).
