SLOW COOKER THAI CHICKEN

SLOW COOKER THAI CHICKEN
8 bone-in chicken thighs, skin removed, about 4 1/3 pounds
3/4 cup salsa
1/4 cup natural peanut butter
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon ginger, freshly grated
Salt, to taste
3/8 teaspoon xanthan gum, optional
1/4 cup peanuts, chopped, 1 1/2 ounces
2 tablespoons cilantro, chopped

Place the chicken pieces in a slow cooker. Combine the remaining ingredients except the peanuts and cilantro, adding salt to taste; pour over the chicken. Cook on LOW about 4-5 hours (see my comments below) or until the chicken is no longer pink in the center. Remove the chicken from the slow cooker with a slotted spoon. Skim the fat from the sauce and thicken with xanthan gum, if desired. Pour the sauce over the chicken and sprinkle with peanuts and cilantro.

I got this recipe from the Betty Crocker website. The recipe stated that 8 chicken thighs would weigh about 2 pounds, but my package weighed over 4 pounds and they weren't all that big. I followed the recipe pretty closely except for the cooking time, salt and the xanthan gum. They said to let the chicken cook for 8-9 hours. After only 4 1/2 hours mine was falling off the bones and the meat was cooked through. After 8 or 9 hours, the meat would have been in shreds. I didn't have time to wait for the fat to rise to the surface of the sauce so I just whisked in some xanthan gum to thicken it and keep it from separating too much. I got almost 2 cups of sauce and you can see in the photo that there is plenty to go around. The recipe didn't call for any salt at all and it was pretty flat tasting without it. Although this dish tastes good, I don't think I like it enough to make again. Click the photo to see a close-up.
