CHIPOTLE TURKEY SANDWICH

CHIPOTLE TURKEY SANDWICH
1 serving Carbquik Artisan Flat Bread, Carbquik Cheddar Bun or Flax Sandwich Bun
2 tablespoons Chipotle Mayo
1 piece leaf lettuce, 1/4 ounce
1 thin slice pepper jack cheese, 3/4 ounce
1 1/2 ounces thinly sliced smoked deli turkey, preferably sugar free *
1 thin slice red onion, optional, about 1/2 ounce

Split the bread or bun into two thin slices. Spread the mayonnaise on both bun halves. Top with some lettuce, then the cheese, turkey and onion.

Makes 1 serving
Do not freeze

* I used Boar's Head brand, which is the only brand I know of that has no sugar or carbs. If you can't get sugar free smoked turkey, add a carb to the counts.

With Onion:
Per Serving: 401 Calories; 36g Fat; 14g Protein; 10g Carbohydrate; 5g Dietary Fiber; 5g Net Carbs

Without Onion:
Per Serving: 396 Calories; 36g Fat; 14g Protein; 9g Carbohydrate; 5g Dietary Fiber; 4g Net Carbs

Oh boy, is that a spicy sandwich! I thought I could get by with just 1 tablespoon of Chipotle Mayo, but it was spread a little thin. However, two tablespoons makes it very hot and the pepper jack cheese adds even more heat. You could use plain mayonnaise, but then it wouldn't be a chipotle turkey sandwich, would it?
