Vegetarian Meals

I'm sort of a picky eater.  The only type of meat I like is red meats.  I know that's not healthy, so I try and force myself to eat chicken and pork and turkey, but I just can't stand the taste.  It's just my husband and I so my question is this. If we were to have say shake and bake chicken, stuffing, and a vegetable, what could I fix in place of the chicken for myself that would meet my nutritional needs? Something vegetarian.  Thank you.

First, try make a chicken meal somewhat "less chicken" - by adding lots of vegetarian ingredients. For instance, this recipe: Chicken Breast Stuffed with Mushrooms and Peppers
