I know that there are different levels of vegetarianism. What is the name for a person who eats no meat atall except for chicken? ONLY chicken.

Hello Erin,
well first of all I'm an expert for the raw, Palaeolithic diet, not Vegetarianism! But I can still answer your question. There is no  "official"
specific term, as recognised by vegan vegetarians, except perhaps "part-vegetarian" or "semi-vegetarian". However, a person who eats no red meat, no eggs or dairy,
but who eats chicken might be called a "pollotarian".
