Dear Karen,I work late getting home at about 9:30 every night.Often either I am too tired or its too late to cook[I am a very slow cook] What I was thinking about was just juicing a bunch of vegetables.Do you think it suitable to have a liquid dinner.your thoughts would be appreciated.     yours patrick.h

Hi Patrick,

I apologize for taking so long to respond to your question. There has been a death in my family and I have not been able to keep up with my email.

I don't think that juicing is going to provide a very satisfying meal for you. While vegetable juice is nutritious, it does not have much protein and that is something you really need at your evening meal. You could try doing some batch cooking on the weekend (making a lasagna, large batch of soup, or casserole) and freezing in individual portions. That way you have something quick to reheat when you walk in the door. You could also keep some good quality frozen dinners on hand as well (supplement with sliced vegetables and/or a piece of fruit to balance out the meal).
