cooking fish

Question
Hello,

I have seen recipes advising that fish should be cooked in parchment but have never been able to find out what is meant by parchment and why is it necessary. Can you please advise?

I cook fish in the microwave--just put it on a glass plate.  Is this bad?

Thanks,

Karen

Answer
Hi Karen,

I haven't had a microwave in 15 years, do not like them, doubt their safety.

Here is a page on cooking fish, roll to the bottom to cooking in parchment or foil.
