I am making slow but steady progress eating low glycemic carbs and cutting out fat. I did go carb free for a while but it was too hard to handle the cravings and I had no energy.
Once a week I will splurge and have a some baked or mashed potatoes, a bag of chips, etc. I always get bloated up and  need to  lay down and have a nap.
I thought it was the high glycemic starch, but white bread, pastries,do not not cause this problem. Other foods in the potato family do not affect me like this at all.
Any thoughts?

Sounds like a very specific kind of reaction to particular foods rather than a "generic" high glycemic carbohydrate response.

Diagnosis of specifics here is best left to medical professionals, but test might not reveal the root cause either.

My best advice would be to NOT try to go carb-free; you need some high-quality carbs to function properly.
