sparkling water

Question
Hello!
I know some questions are difficult but here they are:
1. Would drinking sparkling water heavily interrupt fasting? I ask because I dislike plain water.
2. What do you think about soured soaked heated grains which are promoted by Weston Price Foundation?
3. In scientific studies vegetables which were heated were more abundant in vitamins and had less antinutrients in them. What would be your opinion on that?
4. Do you have any strategy on finding high-quality food? (For example calling to good restaurants and asking where is their food from? - I haven' t tried that one but I conceived it ;) )

Answer
1) I found sparkling water to irritate my digestive tract when I first tried this diet. I had had severe gastric problems at the time. But if you feel fine, then go ahead.

2)  Grains are a really bad idea. All that soaking/fermenting only reduces the levels of some of the antinutrients in grains, plus it doesn't change the fact that grains are a non-palaeo food unsuited to the human digestive system. They are, of course, "less worse" than unfermented grains, but that's all.

3) Cooking vegetables does reduce the antinutrient-levels in them, and by breaking down the cell-walls it does release some nutrients. However, the more one heats the more nutrients get destroyed by heat, which is why health authorities always tell one to only gently steam vegetables and the like. Vitamin C is particularly easily destroyed by heat but other nutrients get affected too. Also, the act of cooking creates several different kinds of heat-created toxins such as advanced glycation end products, polyclic aromatic hydrocarbons etc., so that it's not a good idea.

4) I get all my high quality foods, such as grassfed meats etc. either from farmers' markets or from wild game butchers. The former are much cheaper. Supermarkets should be avoided like the plague.

HTH,
RPG.
