My dad is 63 he has high blood pressure and high collesteral 3 years ago he had a valve replacement and now has high pottassium I am trying to find out what foods he can eat he is a meat and potato and vegtable kind of person my mother dont know what too cook any more ,everything the doctors tell him that is good for his heart is bad for pottassium please help thank you Mike

Hi Mike,

Unfortunately your Dad's doctors are right: Meats must be excluded on a low potassium diet. As to plant-originated foods, below is a list list of low potassium foods. You'll see that some beans, pastas, eggplant, mushrooms, many salad greens are OK, so you can take a food from the list and search Internet for recipes using that food. For example, try this  black bean dip.

15.5 Oz.  can black beans, drained
0.5 cup  plain low fat yogurt
0.75 cup  mild salsa
Baked tortilla chips
Carrot and celery sticks

Place beans in food processor with metal blade. Process until fairly smooth, add yogurt, process 30 seconds.

Mix in salsa quickly.Place in an attractive bowl and serve with baked tortilla chips and/or carrot and celery sticks.

Apple (1 medium can be considered "low potassium")
Asparagus
Apricots
Blackberries
Beans
Blueberries
White cabbage
Carrots, cooked

Celery (1 stalk)

Peaches, fresh (1 small can be considered "low potassium")
