I am trying to learn more about Agave Nectar as a sugar substitute.  What do you know about it?  Thank you.

Agave Nectar is the perfect sugar substitute. In it's raw form it is low on the glycemic index and is 100% a natural product. I recommend Blue Agave that is raw (just check the label) as this is the healthiest variety. In baking you would want to use 3/4 of the call for sugar in agave and reduce the liquid in the recipe by 1/4 (for example 2 cups sugar and 1 cup water would be 1 3/4 cups agave and 3/4 cups water.
