QUESTION: Hi,

I'm not sure where to post this but I'm hoping you can point me in the right direction.  

I'm looking for software that can calculate the nutritional value of my recipes.  For example, I input the quantities of the ingredients and indicate the volume per serving and the program will tell me how much of each vitamin and mineral, the carb content, the protein content, etc are in that dish.   Because I do a lot of regional cooking the software should have a database with Asian, European, and, well, South American ingredients.  Do you know of anything out there?  Or something approximating that kind of software?

Also, I love to adapt recipes.  Do you know  of any good textbook quality cookbooks that explain the chemistry of what's going on in the recipe?  I like to adapt recipes and make them carb free or dairy free or sugar free and sometimes vise versa.  I have no special dietary restrictions, I just enjoy playing in the kitchen but would like more -- how to say -- "structure" about what I can do.

There are several options. For example, fitday.com has both free online analysis tool and paid software.

Then there is CarbTrack allowing to calculate all kind of nutrient balances:

Finally, there's the most comprehensive and searcheable "USDA National Nutrient Database for Standard Reference, Release 20"

I decided against being rated, that's why there's no such button. Too old, I guess, for that kind of games!

BTW, I have one more software that calculates nutrient ratios in order to predict will this meal be pro-insulin or anti-insulin, based on the Wilder formula from 1920s. Let me know if interested, I'll see if it's possible to free this database of my 180 recipes sitting there.
